I am obsessed with FRESH FRUIT during the summertime!  Pair it up with rum and I’m ecstatic.

Today was SO freakin’ hot but I’m not complaining.  I finished cleaning house while Taylor did some caulking around the windows outside.  He came in and looked like he had been sprayed with a water hose he was sweating so badly.  What I love about cocktails like this during the summer is that they’re SO REFRESHING and not overly sweet… you can get some summertime refreshment, the health benefits of fresh fruit and get your drink on at the same time.

I’d say this is a “win-win” situation!

This is how I mix up my Strawberry Mojitos… what’s your favorite flavor?

Strawberry Mojitos

Ingredients

  • 1 cup sliced fresh strawberries
  • 12 mint leaves
  • 1/8 cup simple syrup
  • Juice from 1/2 lime
  • 4 ounces light rum
  • Club soda
  • Optional garnishes: strawberries, lime wedges and/or mint sprig

Instructions

  1. In a cocktail shaker, muddle strawberries, mint leaves, simple syrup and lime juice with a muddler (use the back of a wooden spoon if you don't have a muddler).
  2. Pour in two glasses over ice (equal amounts). Add 2 ounces of rum to each glass and top with club soda. Garnish with a strawberry, lime wedge and/or mint sprig if desired.
