Since it’s still warm here on the coast of NC, I’ve been wanting to make a frozen cocktail with a seasonal flair. I was reading through cranberry (food) recipes and the idea just popped in my head the other night… imagine that! 😮
This recipe is extremely similar to a traditional piña colada, but I substituted cranberry juice cocktail in place of pineapple juice. I kept adding ingredients into the blender until I got it to taste like I wanted it. I have a large capacity blender, so split the recipe and make this in batches if necessary.

- 8 cups ice
- 1/2 cup cream of coconut
- 3/4 cup cranberry juice cocktail
- 1 cup white rum
- Whipped cream and ground nutmeg, for topping (optional)
- Place ice, cream of coconut, cranberry juice cocktail and rum in blender. Blend until smooth.
- Top with whipped cream and ground nutmeg, if desired.
