Shrimp Tacos
Ingredients
For the Cilantro Lime Slaw:
- 2 cups thinly sliced green cabbage
- ¼ teaspoon lime zest
- Juice from 1 lime about 2 tablespoons
- 2 teaspoons honey
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh cilantro
For the Shrimp Tacos:
- 1 ¼ pounds medium shrimp peeled and deveined
- Juice from 1 lime about 2 tablespoons
- 2 tablespoons taco seasoning homemade or store-bought
- 1 tablespoon olive oil
- 8 flour tortillas taco size
- ¼ cup chopped fresh cilantro
Instructions
For the Cilantro Lime Slaw:
- Toss together cabbage, lime zest, lime juice, honey, salt, pepper and cilantro in a bowl until combined. Cover and refrigerate.
For the Shrimp Tacos:
- Rinse shrimp and pat dry with paper towels. Place shrimp in a bowl and drizzle with lime juice. Gently toss to coat evenly. Sprinkle with taco seasoning and gently toss to coat evenly.
- Heat olive oil in a large skillet over medium high heat. Add shrimp to skillet and cook for approximately 1 ½ to 2 minutes on each side, or until shrimp are cooked and have just turned pink on both sides. Remove from heat.
- Heat tortillas according to package directions.
- Assemble tacos by layering slaw, shrimp and cilantro. Top with your favorite toppings.
