Shrimp Tacos

These delicious Shrimp Tacos with a zesty cilantro lime slaw are a quick and easy dinner exploding with flavor!

Ingredients

For the Cilantro Lime Slaw:

  • 2 cups thinly sliced green cabbage
  • ¼ teaspoon lime zest
  • Juice from 1 lime about 2 tablespoons
  • 2 teaspoons honey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro

For the Shrimp Tacos:

  • 1 ¼ pounds medium shrimp peeled and deveined
  • Juice from 1 lime about 2 tablespoons
  • 2 tablespoons taco seasoning homemade or store-bought
  • 1 tablespoon olive oil
  • 8 flour tortillas taco size
  • ¼ cup chopped fresh cilantro

Instructions

For the Cilantro Lime Slaw:

  • Toss together cabbage, lime zest, lime juice, honey, salt, pepper and cilantro in a bowl until combined.  Cover and refrigerate.

For the Shrimp Tacos:

  • Rinse shrimp and pat dry with paper towels.  Place shrimp in a bowl and drizzle with lime juice.  Gently toss to coat evenly.  Sprinkle with taco seasoning and gently toss to coat evenly.
  • Heat olive oil in a large skillet over medium high heat.  Add shrimp to skillet and cook for approximately 1 ½ to 2 minutes on each side, or until shrimp are cooked and have just turned pink on both sides.  Remove from heat.
  • Heat tortillas according to package directions.
  • Assemble tacos by layering slaw, shrimp and cilantro.  Top with your favorite toppings.
