My husband likes to eat healthy. REALLY healthy. I grew up in a small farming community in Maysville, NC & my Grandma cooked just about everything with salt pork
It’s not all that good for you but tastes good. It was just the way it was and I am proud of my country roots; it makes me who I am. My husband, along with working in a few different restaurants, have inspired me to be more health conscious which is a good thing for both of us (although there are some recipes I MUST use salt pork in!).
Since we live on the coast of NC, there is no shortage of seafood. We enjoy these healthy shrimp tacos regularly, & I hope you enjoy them just as much as we do. Oh, & don’t forget: Support your neighbors & buy your seafood LOCALLY.
NEVER buy imported shrimp!
Ingredients
- 1 1/2 lbs medium sized shrimp, peeled
- 1 package whole wheat tortillas
- Juice from 1/2 lime
- 2 tbsp olive oil
- 1 tsp chopped garlic
- 1/2 tsp cumin
- 1/2 cup sliced red pepper
- 1/2 cup sliced green pepper
- 1/2 cup sliced yellow pepper
- Pepper, to taste
- 2 tbsp chopped cilantro
- 2 cups thinly sliced red cabbage
Instructions
- Heat olive oil in skillet over medium-high heat
- Add shrimp & garlic
- Squeeze the juice from 1/2 lime over shrimp
- Saute until shrimp are pink
- Add red, green & yellow peppers. I am able to find pre-packaged peppers like this in my local grocery store:
- Add cilantro, cumin & pepper
- Cook, stirring occasionally until peppers are slightly tender; approximately 5-7 minutes
- Place wheat tortillas in microwave for 10 seconds each
- Fill tortilla with shrimp mixture
- Add sliced cabbage
- Serve with sweet cilantro sour cream and easy homemade salsa
