Healthy Shrimp Tacos

My husband likes to eat healthy.  REALLY healthy.  I grew up in a small farming community in Maysville, NC  & my Grandma cooked just about everything with salt pork :-)   It’s not all that good for you but tastes good.  It was just the way it was and I am proud of my country roots; it makes me who I am.  My husband, along with working in a few different restaurants, have inspired me to be more health conscious which is a good thing for both of us (although there are some recipes I MUST use salt pork in!).

Since we live on the coast of NC, there is no shortage of seafood.  We enjoy these healthy shrimp tacos regularly, & I hope you enjoy them just as much as we do.  Oh, & don’t forget:  Support your neighbors & buy your seafood LOCALLY.  :-)   NEVER buy imported shrimp!
