    So crisp and refreshing, this easy Pineapple Mojito is a perfect cocktail for summer entertaining!  An emoji icon of a pineapple.

    3 Pineapple Mojitos garnished with fresh pineapple, lime and mint

    It’s basically perfect for summer in general if you’re a mojito lover.  Whether it’s lounging by the pool or evening porch sitting, this is nothing short of delicious.  The best part is that this cocktail comes together in just 5 minutes!

    How to Make a Pineapple Mojito

    You’ll start by muddling fresh mint leaves with simple syrup and lime juice in a cocktail shaker.  Add rum and pineapple juice, then cover the shaker and shake vigorously.  Strain into a highball glass filled with ice and top with club soda.  Easy peasy!

    What If I Don’t Have a Muddler?

    No problem!  Use the handle of a wooden spoon to muddle the mint with the simple syrup and lime juice.

    Description

    So crisp and refreshing, this easy Pineapple Mojito is a perfect cocktail for summer entertaining!


    Ingredients

    • 8 large fresh mint leaves
    • 2 tablespoons simple syrup
    • Juice from 1/2 of a fresh lime (about 1 tablespoon)
    • 1/2 cup white rum
    • 1 cup pineapple juice
    • 1/2 cup club soda
    • Pineapple wedges, lime wheels and/or fresh mint sprigs for garnish (optional)

    Instructions

    1. Muddle the mint leaves with simple syrup and lime juice in a cocktail shaker.
    2. Add rum and pineapple juice.  Cover and shake vigorously.  Strain into 2 glasses filled with ice and top each glass with 1/4 cup club soda.
    3. Garnish with pineapple wedges, lime wheels and/or fresh mint sprigs, if desired.
