Easy Chicken Parmesan



  • 4 boneless, skinless chicken breasts, cut in half
  • 2 cans ITALIAN style stewed tomatoes
  • 2 tbsp corn starch
  • 2/3 cup grated parmesan cheese
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • Pinch of sugar


  1. Preheat oven to 350
  2. Place chicken in greased casserole/baking dish and bake (uncovered) for 25 minutes

While chicken is baking:

  1. In saucepan, mix tomatoes, corn starch, sugar, oregano & basil
  2. Cook over medium heat, stirring constantly until thick
  3. Once chicken is done, pour sauce mixture over chicken & sprinkle with parmesan cheese
