This fall-inspired pumpkin oatmeal is a delicious breakfast with just 5 minutes of prep time required using your slow cooker!

Let your slow cooker do the work! This oatmeal seriously smells like pumpkin pie while it’s cooking… so sweet and savory with the perfect amount of spices and brown sugar.
This recipe calls for pumpkin pie spice which you can purchase, but you probably have all the spices you need on-hand to make your own homemade pumpkin pie spice.

I’m not a huge breakfast eater, but I have always loved oatmeal. Â Sometimes, I’ll even eat it for lunch or dinner. Â What’s awesome about this recipe is that there’s basically no prep time whatsoever. Â Just throw everything in your slow cooker and stir to combine.
And it’s so good topped with chopped pecans and raisins!

Crock Pot Pumpkin Oatmeal
- Total Time: 6 hours 5 mins

Description
This fall-inspired pumpkin oatmeal is a delicious breakfast with just 5 minutes prep time required using your slow cooker!
Ingredients
- 2 cups steel cut oats
- 6 cups water (more or less depending upon desired consistency)
- 1 ¼ cups canned pumpkin puree
- 2 teaspoons vanilla extract
- 1 tablespoon pumpkin pie spice
- â…“ cup packed brown sugar
- Pecans and/or raisins, for topping (optional)
Instructions
- Spray the insert of your crock pot very well with cooking spray (if you don’t, it will stick!).
- Place oats, water, pumpkin puree, extract, pumpkin pie spice and brown sugar in your slow cooker insert and stir well to combine.
- Cover and cook on low for 6 hours. Stir occasionally if possible.
- Top with pecans and raisins when serving, if desired.

how would you adjust the cooking time if you use old fashioned oats instead of steel cut?

Can it be reheated next day?
Hi Carly, Yes but you might need to add a little water when reheating to get the consistency you want. The longer it sits it will absorb more water and become drier the next day.
