I adore guacamole! However, the first time I tried to make it I purchased my avocados under-ripe. I could hardly get the flesh out of the skin and it was hard as a rock. I learned the hard way that the trick is to press on them slightly. If they give slightly they’re perfect. If an avocado gives a LOT (feels mushy) or the skin is coming away from the avocado it’s probably too over-ripe for guacamole.
