I haven’t exactly been the best so far this summer about my eating habits. I was on such a good roll a while back until I got the flu and it flew straight out the window. Most people don’t want to eat when they get sick but that’s all I want to do. Seriously… what else is there to do when you’re stuck in the house because you’re basically quarantined from society for a week?!
This fruit salsa right here is the best of both worlds. It’s healthy AND satisfies your sweet tooth craving… a win-win situation!
And besides, I totally needed to re-photograph this fruit salad when I made it. (Can you say over-exposed or what???)
The homemade cinnamon chips are crazy easy to make. It’s simply brushing flour tortillas with butter, sprinkling a mixture of cinnamon, sugar and nutmeg on them, slicing and baking.
All of that delicious fruit with a little honey, lime juice and chopped fresh mint is a total flavor EXPLOSION.

- Total Time: 30 minutes
- Yield: 80 chips and approximately 4 cups of fruit salsa
Ingredients
For the cinnamon chips:
- 1 15-ounce package flour tortillas (10 8-inch tortillas)
- ¼ cup butter, melted (½ stick)
- 3 tablespoons white granulated sugar
- 1 teaspoon cinnamon
- â…› teaspoon nutmeg
For the fruit salsa:
- 1 cup diced pineapple (fresh or canned, drained)
- 1 medium mango, peeled and diced (about 1 cup)
- 2 kiwis, peeled and diced (about 1 cup)
- 1–½ cups fresh diced strawberries
- â…› cup honey
- 1 tablespoon lime juice
- 1 tablespoon fresh chopped mint
Instructions
For the cinnamon chips:
- Preheat your oven to 350 degrees F.
- In a small bowl, combine sugar, cinnamon and nutmeg.
- Place tortillas on a cutting board and brush with melted butter. Â Sprinkle evenly with cinnamon mixture and slice into 8 triangles (a pizza cutter works great!).
- Place in a single layer on a large baking sheet and bake for approximately 10 minutes, or until lightly golden and crispy.
- Place tortillas on a wire rack to cool and repeat in batches with the remaining tortillas (will be about 3 batches).
For the fruit salsa:
- In a medium bowl, combine all ingredients. Â Serve immediately.
