This is a super quick and easy ICE CREAM cocktail that will make you feel like you’re in the tropics… I call it a Spiced Banana Cream Cocktail.
What’s more comforting than ice cream? Mixin’ it with booze, that’s what (for adults, anyway!). With summer quickly approaching, I’m finding myself thinking of cocktails that I can whip up in my blender in a moment’s notice.

I recently bought a half gallon of vanilla ice cream to have around since it’s so HOT outside!
I never ended up eating it… SO I SPIKED IT AND DRANK IT.

It was as simple as blending the vanilla ice cream with Blue Chair Bay’s Spiced Coconut Rum, cream of coconut and bananas.
Zip. Done.
When Blue Chair Bay Rum asked me if I wanted to be a part of their Blogtender Nation to celebrate National Beverage Day on May 6, of course I accepted. Because anyone that knows me knows I’m all about beverages.
Their Spiced Coconut Rum was so smooth and full of flavor… I can’t wait to try it in another cocktail.

Spiced Banana Cream Cocktail
- Total Time: 5 minutes
- Yield: 2 cocktails
Ingredients
- 2 cups vanilla ice cream
- 2 medium ripe bananas, peeled and sliced into about 1″ chunks
- ¼ cup cream of coconut
- 1 cup Blue Chair Bay Coconut Spiced Rum
Instructions
- Place all ingredients in blender pitcher. Cover and blend until smooth.

I would definitely make a Cayman Island Rum Cake. Every time I make one it brings back memories of our honeymoon cruise. That was the first time I ever had a Tortuga rum cake and when I found the recipe I now use, I was surprised how close it was to the original. I am ready to make another one especially as summer is fast approaching.

I would use the rum to marinate a delightful spiced rum pork tenderloin. Soaking golden raisins and pineapple- grilling the pork tenderloin- and the pineapple…. and serving it all with a toasted cocomut cous cous- buttered rum reduction.
