Baked Salsa Chicken
This recipe couldn’t be easier… your favorite prepared salsa and a few other ingredients are all you’re going to need. There’s very little prep work involved so it’s perfect for those back-to-school busy weeknights!
I love recipes that come together with minimal effort and taste like you spent an eternity preparing them… this is one of those recipes!   It literally takes 5 minutes to throw together.
I shared this dish with my neighbor and she texted me telling me how much she and her boyfriend enjoyed it. LOVE! That’s one thing I’ve always enjoyed is sharing food with friends and family. Speaking of sharing food, I’m getting ready to host the biggest celebration of my life in a couple of weeks feeding 50+ people and couldn’t be more excited (wish me luck!). We’re celebrating the life of our dear friend who passed suddenly, my new house and my friend’s recovery after open heart surgery.Â
Dinner has never been easier than this… enjoy!

I made this tonight and loved the dish. I used fresh salsa so it looked a bit different. The taste was wonderful. I served it on a bed of Lime-Cilantro Rice-A-Roni. It was perfect for the dish. I now have a new favorite dish. Thank you.

Thank you, Mary – Serving it over rice sounds so delicious… I’m so glad you enjoyed it!
Served this for the first time today and was lambasted by everyone at the table… for not making more of it. Laughably easy to make and absolutely delicious. Definitely going in the rotation but I guess I’ll be doubling the recipe from now on.

Thank you so much, Kevin – I’m so glad to hear you and your family enjoyed the chicken!
This was delicious! My only gripe – between the salsa and the taco seasoning, it was pretty salty. Seems obvious, but check the sodium content of the salsa you’re planning to use! Mine was 11% of my daily sodium in just 2 tbsp – so I guess that explains why it was salty.

Nice recipe. Tastes great and cooking times / temps were right on target!
I used your suggestion, but added the black beans right into the pan.
I prepared a garlic-lime sour cream mix to serve on the side.
And note for followers: I always use split chicken breasts. I save (freeze) the backbone with a bit of meat for making chicken stock. This reduces cost per servings to a ridiculously low $2.50 -$3.00.

I agree. I always make my own seasoning mix. I added a can of black beans right in the pan with the prepared salsa. High Fives all around the table.
Hi, I was wondering if fresh made salsa would work with this recipe instead of jar? I was thinking about adding a small can of tomato sauce to it with the fresh salsa so it’ll have enough sauce. I’d like to make this soon. What are your thoughts?
Hi Denise, I’ve only made this recipe using prepared salsa in the jar, but I think that it would still be delicious with the way you’re wanting to prepare it. I haven’t personally tried it so I can’t say with 100% certainty. Please let me know how it turns out if you try it and I hope you enjoy it!
Very good. We actually added a little cream cheese to make it like a creamy bake and fajita seasoning instead of taco. Making it for the second time today!

So easy! But I added chopped spinach with a table spoon of cream cheese and sour cream on top of the chicken. Everybody LOVED it!

Going to try it tonight
I made this recipe and it was deliciously easy and tasteful. My younger daughter who had a diminished appetite after recovering from not feeling well ate 2 portions with gusto. I’ll definitely be keeping this recipe. Thank you.

Pretty solid dish! Also laid each breast on a bed of rice. Tasted like a chicken enchilada minus the wrap. Will add this to the make often list. Also made my own taco seasoning since I didn’t have premade. Way better choice. Thanks for the simple recipe!

I made this dish with chicken tenderloins and it was delicious. I cooked rice on the stovetop while the chicken baked and then poured the juices from the chicken over the rice. It was a big hit with my husband.
