Baked Salsa Chicken
This recipe couldn’t be easier… your favorite prepared salsa and a few other ingredients are all you’re going to need. There’s very little prep work involved so it’s perfect for those back-to-school busy weeknights!
I love recipes that come together with minimal effort and taste like you spent an eternity preparing them… this is one of those recipes! It literally takes 5 minutes to throw together.
I shared this dish with my neighbor and she texted me telling me how much she and her boyfriend enjoyed it. LOVE! That’s one thing I’ve always enjoyed is sharing food with friends and family. Speaking of sharing food, I’m getting ready to host the biggest celebration of my life in a couple of weeks feeding 50+ people and couldn’t be more excited (wish me luck!). We’re celebrating the life of our dear friend who passed suddenly, my new house and my friend’s recovery after open heart surgery.
Dinner has never been easier than this… enjoy!
PrintBaked Salsa Chicken
- Total Time: 38 minutes
- Yield: 4 servings
Ingredients
- 2 large boneless, skinless chicken breasts, sliced in half lengthwise
- 1–½ tablespoons taco seasoning
- 1–½ cups prepared salsa
- 1 cup shredded Mexican cheese blend
- 1 tablespoon chopped fresh cilantro
Instructions
- Preheat your oven to 375 degrees F. Spray a baking dish with cooking spray.
- Rub chicken breasts with taco seasoning on both sides and place in dish. Cover with salsa.
- Bake (uncovered) for 30 minutes, or until chicken is done and juices run clear. Sprinkle with cheese and return to oven. Bake for an additional 2-3 minutes, or until cheese is melted.
- Sprinkle evenly with cilantro.

I’m not a fan of meat, especially chicken so in my search for something to fill the lack of protein in my diet, came across this recipe. SO GLAD I DID. It’s kind if embarrassing how easy it is and the so few ingredients it calls for but in any case, SO GOOD. I topped mine with sriracha and avocado bc I like heat and the freshness of avocado – def will be one of my go tos when I need meat protein!! !I have an extra breast left so may shred it tomorrow and make a burrito bowl. Very happy to come across this insanely easy and yummy recipe!!

This recipe was delicious! I did add one can of black beans, one chopped jalapeño and fresh corn to the bottom of the casserole dish and topped it as per the recipe. It was AMAZING! I served it with a simple salad dressed with fresh lime juice, EVOO, a dash of cumin and chipotle Chile powder for a super health dinner! Absolutely loved by ALL my family! I love your recipe – so simple and so tasty. Thank you! The second time I tried it, I cooked it in the instant pot because my chicken breasts were frozen. It was wonderful. However, I ended up with several extra cups of very tasty sauce that I did not want to waste, so on day two I turned it into a soup. Chopped chicken, added spinach, corn, and cauliflower rice, and simmered. Added more seasoning as the veggies depleted potency some. Was wonderful.
I was surprised by how well this recipe turned out, since it’s so easy. I used a meat thermometer and pulled the chicken out when it reached 165 degrees, and it was SO moist with great flavor. I’ll definitely make this again, thank you Amy!

I was looking for a Mexican dish with chicken breast and happened upon this one. It did have 5 stars but that was with only 4 reviews. It looked good and also didn’t require a lot of ingredients or prep and cooking time. I followed the suggestion to serve it with black beans and Spanish rice. I wish I had taken a picture of it on the plates. It looked really good and even better it tasted amazing. I have a very picky husband who can be hard to please. I asked him what he thought and he said “ I give it 5 stars and you need to go out and give her 5 stars on her site”. So yes, this one is definitely 5 stars and will be a bi-weekly meal for us from now on. I loved it and it’s so easy to make!!

Would the cook time change if you used chicken tenders instead of breasts?
Hi Sarah, I’ve only tested this recipe with chicken breasts so I can’t say with certainty. I’m thinking it would probably be less time since chicken tenders are normally thinner than breasts. Let us know how it turns out if you try it! 🙂
