July is National Blueberry Month, so this is what was baking in my kitchen recently:Â Skillet Blueberry Cobbler.
If it can be prepared in a cast iron skillet, that’s what I’m going to use if at all possible.
There’s just something rustic about them that takes me back in time to my grandma’s house as a kid and gives me “warm fuzzies”.
I use only blueberries grown locally and support my community and neighbors. These beautiful blueberries were purchased at The Friendly Market.
Homemade Blueberry Cobbler isn’t hard to make at all; it just takes a little time… but it’s well worth it. Using a cast iron skillet on the stove top, simmer the blueberries with cornstarch, butter, cinnamon, sugar, lemon juice and water for a few minutes.
Spread a homemade topping over the simmered blueberry mixture and bake right in the skillet.
Easy. As. Pie. (or cobbler!)

Ingredients
For the Blueberry Mixture:
- 2 pints fresh blueberries (or frozen blueberries that have been thawed)
- 2 tablespoons unsalted butter
- 1 teaspoon ground cinnamon
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 2 tablespoons water
- 2 teaspoons corn starch
For the Topping:
- 1 ¼ cups all purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup granulated sugar
- ¾ cup whole milk
- 5 tablespoons butter, cut into small cubes
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400 degrees F.
- In a 10 inch cast iron skillet over medium high heat, melt 2 tablespoons of butter. Add blueberries and the remaining blueberry mixture ingredients (cinnamon, sugar, lemon juice, cornstarch and water).
- Stir gently until cornstarch dissolves. Bring to a gentle boil and simmer for 3 minutes. Remove skillet from heat and set aside.
- Prepare topping: combine flour, sugar, baking powder and salt in a medium bowl.
- Add butter cubes to flour mixture. Using the tips of your fingers, crumble butter into the flour. Add milk and vanilla extract. Stir with a large spoon until a soft batter is formed.
- Drop spoonfuls of batter over blueberry mixture. Gently spread over blueberries.
- Bake for 20 minutes, or until topping is browned and blueberry mixture is bubbling around edges of skillet.

I love cooking in my cast iron pan too! And I have a love for blueberries so this is a definite must try. Some people are scared to use cast iron for some reason. I grew up with my parents using them and my Mom still has the same big skillet from when I was a kid – we won’t mention how many years ago that was tho 🙂 Now my kids love it when I take out the cast iron pan because they know that I will clean that pan so less dishes for them lol!

I made this today. Made it at the spur of the moment. I used strawberries instead of blueberries because that’s what I had in the fridge. Also used almond milk instead of whole milk because that’s what was in the fridge. It was excellent! Ate it with whipped cream.
