    Caprese Bites

    I absolutely love anything and everything with the fresh flavors of caprese.  These easy Caprese Bites are not only healthy, they’re insanely delicious and are going to be a total hit at your next gathering!

    Seriously… just four simple ingredients are all you need:  Grape (or cherry) tomatoes, fresh basil leaves, fresh mozzarella cheese and balsamic vinegar for the balsamic reduction.  Oh, and toothpicks, for serving.

    It feels so good to eat healthy!  These can be made a day ahead of time and refrigerated, but the basil might be a little wilted the next day.  I don’t care for wilted basil (some people are okay with it).  I typically serve these no later than a few hours after preparing them.

    Caprese Bites


    • Total Time: 30 minutes
    • Yield: 20-25 bites

    Description

    A simple and refreshing appetizer with just 4 simple ingredients.  It’s everything you love about a caprese salad, but in an easy bite-size appetizer!


    Ingredients

    • 1 pint grape (or cherry tomatoes)
    • 1 (8 ounce) package fresh mozzarella
    • Fresh basil leaves (about 20 to 25 leaves)
    • 1 cup balsamic vinegar

    Instructions

    1. Count your tomatoes (I had 23 in my pint). Slice your fresh mozzarella into the number of tomatoes you have, trying to slice them into about the size of the tomatoes.
    2. Using toothpicks, layer cheese slices, basil and tomatoes and place on a plate.
    3. Prepare the balsamic reduction by placing the balsamic vinegar in a small saucepan over medium high heat. Bring to a boil and reduce heat to maintain a simmer. Simmer for approximately 8 to 10 minutes, or until desired consistency is met and reduced by about half.
    4. Drizzle over caprese bites when ready to serve.

      Thanks so much for posting this recipe. What a great idea. I prepared this appetizer for a dinner party last night. It was a HUGE hit, especially with the wonderful balsamic reduction. Easy to prepare but oh so wonderful! Everyone raved about the taste and how nice it looked with the colors!

      You always make my food at hit at parties. I tried to give you the credit but a little might have seeped through to me! 🙂
