Sauteed Kale & Mushrooms

Kale, a type of cabbage,  is a POWERHOUSE of vitamins.  It contains a chemical called “sulforaphane”, which is known for fighting cancer. Kale is also an excellent source of antioxidants & fiber.  So, in a nutshell, it is “good for you” and tastes good too!  I LOVE mushrooms & add them to everything I possibly can.  I found this recipe for sauteed kale by Bobby Flay on Food Network & adapted it very slightly.  Treat your body good & enjoy this flavorful, vitamin-packed vegetable :-)

Sauteed Kale & Mushrooms

Ingredients
  • 1 bunch (approximately 1½ lb) kale, coarsely chopped
  • (2) 4 oz packages of fresh blend mushrooms (baby bella, shitake, & oyster mushrooms) Regular mushrooms will work fine if you can't find these!
  • 3 tbsp olive oil
  • 1½ tbsp chopped garlic
  • ⅔ cup water
  • Salt & pepper, to taste
  • 2 tbsp red wine vinegar
Instructions
  1. In saucepan, heat olive oil over medium-high heat
  2. Add garlic & mushrooms & saute until mushrooms are tender, approximately 4-5 minutes
  3. Add water & kale & stir to combine
  4. Cover; cook for 5 minutes
  5. Add salt, pepper & red wine vinegar

    I’m definitely trying this one out tonight. It looks so good! I love kale and I love mushrooms. Combining them sounds ingenious.
