    Today I’m bringing back a long-time favorite cocktail… Malibu Summer Rose Cocktail!

    Yesssss!!!  Back when I worked at a local surgical center here on the coast of NC, one of my awesome co-workers (Summer Rose!) told me her mom won a contest in the late 1980s for creating a mixed drink with Malibu Rum.  She named the cocktail after her… so you know I had to ask for the recipe!

    I immediately went home and made it.  MERCY!!!!

    Delicious is a TOTAL understatement here, friends.  A love face emoji - A smiling yellow face with heart eyes.

    Summer’s mom, Mrs. Jewel Hanson, won a full-on trip to the Bahamas for this winning cocktail.  I MUST meet this woman one day!!!  Thank you Mrs. Jewel, as well!

    Malibu Summer Rose Cocktail

    A delicious tropical-inspired cocktail prepared with coconut rum, peach schnapps, pineapple juice, orange juice and grenadine.

    Ingredients

    • 1 shot Malibu coconut rum 1 ½ ounces
    • 1 shot peach schnapps 1 ½ ounces
    • Pineapple juice
    • Orange juice
    • Grenadine
    • Fresh pineapple slices, orange slices and/or maraschino cherries optional garnish

    Instructions

    • Pour rum and peach schnapps in a tall glass filled with ice.  Add equal parts pineapple juice and orange juice.  Top with a splash of grenadine.
    • Garnish with pineapple slices, orange slices and/or maraschino cherries, if desired.

      Quite nice! However….i felt the peach schnapps dominated too much, so after a think (or two!), added an extra shot of orange juice- much better, then added some passion fruit puree and a splash of lime juice to balance the sweetness and … bingo! Tastes twice as good already (IMHO!).

      Spring has not been so nice yet! I was looking up drinks online and came across this beautifully delicious looking cocktail. We went and bought all of the fixings and are going to try rhen today. Can’t wait!!!

        Hey Alex, the recipe calls to add equal parts pineapple and orange juice after you add the rum and peach schnapps… so enough of each to fill your glass and then top with a splash of grenadine. Hope you enjoy! 🙂
