This smooth and creamy Guinness Cheese Dip is everything you love about cheese dip but with a hint of robust flavor from Guinness stout. It’s a perfect appetizer for St. Patrick’s Day or game day and is prepared in just 20 minutes.

I recently had a few bottles of Guinness stout left over from making my Slow Cooker Corned Beef and Cabbage, and what better way was there to use it than to include some of it in a recipe with CHEESE?!
This easy cheese dip comes together quickly, is deliciously seasoned, and can be easily adjusted to suit your taste.
Ingredients Needed

- Cheese – A combination of shredded sharp cheddar and Gruyère cheese.
- Butter and flour – For making the roux, which thickens the dip.
- Milk – Whole milk.
- Guinness stout – You’ll have some left over from the bottle – I normally sip on it while enjoying the cheese dip!
- Spices – Garlic powder, smoked paprika, and cayenne pepper.
- Dijon mustard
- Worcestershire sauce
How to Make Guinness Cheese Dip

- Make the roux by whisking melted butter and flour together until it forms a smooth, pasty consistency.
- Pour in the milk and Guinness and whisk until smooth.
- Add the spices, Dijon, and Worcestershire and whisk again.

There are many ways to customize this recipe to your liking. Here are a few ideas:
- Increase the heat by adding more cayenne pepper or a few dashes of hot sauce.
- Use a different beer. Please note that different types of beer will have different outcomes in flavor.
- Add your favorite spices to make this dip your personal favorite!
- For a thinner dip, add a few more tablespoons of milk.
- For a thicker dip, add more shredded cheese.
Helpful Tips
- Shred your own cheese from a block. Preshredded cheese often contains additives that prevent it from melting as well as freshly shredded cheese.
- Have your ingredients measured, prepped, and ready to go. This recipe moves fast!

Guinness Cheese Dip
Ingredients
- ¼ cup butter
- ¼ cup all-purpose flour
- ¾ cup whole milk
- ½ cup Guinness stout
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- pinch cayenne pepper
- 8 ounces sharp cheddar cheese shredded (2 cups)
- 4 ounces Gruyère cheese shredded (1 cup)
Instructions
- Melt butter in a 3-quart saucepan over medium heat. Slowly add the flour (while whisking) and whisk until a smooth paste is formed.
- Slowly pour in the milk and Guinness, whisking as you are pouring. Whisk until smooth.
- Add Dijon mustard, Worcestershire sauce, garlic powder, paprika, and cayenne pepper. Whisk to combine. Cook, while constantly whisking, until heated through, slightly thickened, and just starts to bubble (about 1 to 2 minutes).
- Turn off the heat, leaving the saucepan on the burner. Add the shredded cheese, a handful at a time, stirring between each addition, until melted and smooth.
- Serve warm with your favorite dippers.
Notes
- This recipe yields approximately 2 ¾ cups.
- Storage: Once cooled, store in an airtight container in the fridge for up to 3 days.
- Reheating: Reheat on the stovetop over low heat, stirring frequently. If needed, add a few splashes of milk to loosen the consistency.
