Ingredients
¼cupbutter
¼cupall-purpose flour
¾cupwhole milk
½cupGuinness stout
1teaspoonDijon mustard
1teaspoonWorcestershire sauce
½teaspoongarlic powder
½teaspoonsmoked paprika
pinchcayenne pepper
8ouncessharp cheddar cheeseshredded (2 cups)
4ouncesGruyère cheeseshredded (1 cup)
Instructions
Melt butter in a 3-quart saucepan over medium heat. Slowly add the flour (while whisking) and whisk until a smooth paste is formed.
Slowly pour in the milk and Guinness, whisking as you are pouring. Whisk until smooth.
Add Dijon mustard, Worcestershire sauce, garlic powder, paprika, and cayenne pepper. Whisk to combine. Cook, while constantly whisking, until heated through, slightly thickened, and just starts to bubble (about 1 to 2 minutes).
Turn off the heat, leaving the saucepan on the burner. Add the shredded cheese, a handful at a time, stirring between each addition, until melted and smooth.
Serve warm with your favorite dippers.
Notes
This recipe yields approximately 2 ¾ cups.
Storage: Once cooled, store in an airtight container in the fridge for up to 3 days.
Reheating: Reheat on the stovetop over low heat, stirring frequently. If needed, add a few splashes of milk to loosen the consistency.
