Guinness Cheese Dip

This smooth and creamy Guinness Cheese Dip is everything you love about cheese dip but with a hint of robust flavor from Guinness stout.

Ingredients

  • ¼ cup butter
  • ¼ cup all-purpose flour
  • ¾ cup whole milk
  • ½ cup Guinness stout
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • pinch cayenne pepper
  • 8 ounces sharp cheddar cheese shredded (2 cups)
  • 4 ounces Gruyère cheese shredded (1 cup)

Instructions

  • Melt butter in a 3-quart saucepan over medium heat. Slowly add the flour (while whisking) and whisk until a smooth paste is formed.
  • Slowly pour in the milk and Guinness, whisking as you are pouring. Whisk until smooth.
  • Add Dijon mustard, Worcestershire sauce, garlic powder, paprika, and cayenne pepper. Whisk to combine. Cook, while constantly whisking, until heated through, slightly thickened, and just starts to bubble (about 1 to 2 minutes).
  • Turn off the heat, leaving the saucepan on the burner. Add the shredded cheese, a handful at a time, stirring between each addition, until melted and smooth.
  • Serve warm with your favorite dippers.

Notes

  • This recipe yields approximately 2 ¾ cups.
  • Storage:  Once cooled, store in an airtight container in the fridge for up to 3 days.
  • Reheating:  Reheat on the stovetop over low heat, stirring frequently.  If needed, add a few splashes of milk to loosen the consistency.
