Ingredients
2cupsseeded and diced English cucumber*1 large English cucumber or 2 small
⅔cupdiced red onion
1cupseeded and diced Roma tomatoesabout 2 to 3 tomatoes, depending on size
1jalapenomembrane removed, seeded, and diced
1 ½teaspoonsminced fresh garlic
1tablespoonolive oil
1 ½tablespoonsfresh lime juice
¼teaspoonground cumin
½teaspoonkosher salt
½teaspoonblack pepperfreshly ground
1tablespoonchopped fresh cilantro
Instructions
Place all ingredients in a medium bowl and stir to combine and coat evenly.

Notes
