Mediterranean Salad

This refreshing Mediterranean Salad is full of crisp romaine lettuce, vegetables, and feta cheese tossed in a flavorful Greek dressing.

Ingredients

For the dressing:

  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • ½ teaspoon minced fresh garlic
  • ¼ teaspoon Italian seasoning
  • ¼ teaspoon dried oregano
  • teaspoon salt or to taste
  • teaspoon black pepper or to taste

For the salad:

  • 6 cups tightly packed chopped romaine lettuce
  • 1 cup pitted and halved kalamata olives
  • 1 ½ cups halved cherry or grape tomatoes
  • 1 ½ cups thinly sliced cucumbers cut into half moons
  • ¾ cup thinly sliced red onion
  • ¾ cup crumbled feta cheese

Instructions

  • Whisk together olive oil, red wine vinegar, garlic, Italian seasoning, oregano, salt, and pepper in a small bowl or large measuring cup.
  • Toss together lettuce, olives, tomatoes, cucumbers, onions, and feta cheese in a large bowl.
  • Drizzle with dressing and toss again to coat as evenly as possible.

Store in an airtight container in the refrigerator for up to 2 days.
