Oyster Stew

Ingredients

  • 2 tablespoons butter
  • 1/2 cup minced celery
  • 2 green onions, sliced
  • 1 tablespoon minced fresh garlic
  • 16 ounces raw oysters, undrained
  • 1 bay leaf
  • 1/8 teaspoon cayenne pepper
  • Pinch of nutmeg
  • 1/2 teaspoon salt
  • 1/2 teaspoon Old Bay Seasoning
  • 1 cup milk
  • 2 cups half and half

Instructions

  1. In a dutch oven or soup pot, melt butter over moderately high heat. Add celery, green onions and garlic and saute until celery and onions are tender, stirring constantly (about 2 minutes).
  2. Reduce heat to medium low. Add remaining ingredients and allow to heat until the edges of oysters start to curl.
  3. Remove and discard bay leaf before serving. Serve with crackers, if desired.
