Ingredients
- 2 tablespoons butter
- 1/2 cup minced celery
- 2 green onions, sliced
- 1 tablespoon minced fresh garlic
- 16 ounces raw oysters, undrained
- 1 bay leaf
- 1/8 teaspoon cayenne pepper
- Pinch of nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon Old Bay Seasoning
- 1 cup milk
- 2 cups half and half
Instructions
- In a dutch oven or soup pot, melt butter over moderately high heat. Add celery, green onions and garlic and saute until celery and onions are tender, stirring constantly (about 2 minutes).
- Reduce heat to medium low. Add remaining ingredients and allow to heat until the edges of oysters start to curl.
- Remove and discard bay leaf before serving. Serve with crackers, if desired.
