Herb Breaded Chicken Thighs


  • 11/2 cups Italian panko bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 4 boneless, skinless chicken thighs (about 2 pounds)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 2/3 cup prepared ranch dressing
  • Optional:  fresh chopped parsley, for garnish


  1. Preheat your oven to 400 degrees F.  Spray a casserole dish with cooking spray.
  2. Pour panko bread crumbs and Parmesan cheese in a large bowl.  Stir to combine and set aside.
  3. Pour ranch dressing in a medium bowl.
  4. Season chicken with salt and pepper on both sides.
  5. Dip chicken in ranch dressing to evenly coat, then dip in bread crumbs to coat evenly on both sides.  Place in casserole dish.
  6. Bake (uncovered) for 45-50 minutes, or until browned and chicken is thoroughly cooked.
  7. Top with fresh chopped parsley, if desired.
