Preheat your oven to 375 degrees F. Line a 15 x 10 x 1 baking sheet with parchment paper and spray with cooking spray.
Arrange crackers (salt side up) side-by-side in a single layer in prepared pan. Set aside.
Place butter and brown sugar in a medium saucepan over medium high heat. Bring to a boil while stirring constantly. Once mixture reaches a boil, boil for 3 minutes while continuing to stir constantly (set your timer!).
Carefully pour the mixture as evenly as possible over the crackers. Spread as evenly as possible.
Bake in preheated oven for 5 minutes.
Remove from oven and sprinkle chocolate chips over toffee as evenly as possible.
Return to oven and bake an additional 2 to 3 minutes, or until chocolate is melted.
Remove from oven and spread melted chocolate evenly. Sprinkle with desired toppings.
Refrigerate for approximately 1 ½ to 2 hours to allow to harden.
Once hardened, break or cut into pieces.
Store in an airtight container in the fridge for up to 7 days.
