Peach Mojito

The classic mojito gets a fruity twist in this delicious peach mojito prepared with sweet peaches, mint, lime juice, simple syrup, club soda, and rum.

Ingredients

  • 1 medium peach seed removed and cut into about ½-inch pieces.
  • 4 large mint leaves
  • 1 tablespoon simple syrup
  • 1 ½ teaspoons lime juice
  • 2 ounces white rum ¼ cup
  • ½ cup club soda

Instructions

  • Place peaches, mint leaves, simple syrup, and lime juice in a cocktail shaker. Muddle the peaches and mint leaves using a muddler (use the back of a large wooden spoon if you don't have a muddler).
  • Strain into a 16-ounce glass that has been filled with ice.
  • Pour in rum, then top with club soda.
  • Garnish with a peach slice, lime slice, and mint sprig (if desired).

Notes

  • To prepare simple syrup:  Combine equal amounts of granulated white sugar and water in a small saucepan over medium heat.  Heat until sugar is dissolved, stirring occasionally.  Remove from heat and allow to cool completely.
  • For more peach flavor, use a large peach instead of a medium.
