Ingredients

FOR THE PEACH FILLING:

  • ¼ cup white granulated sugar
  • 3 tablespoons all-purpose flour
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 3 pounds fresh peaches* peeled, pitted and sliced into ½ inch wedges

FOR THE TOPPING:

  • 1 ½ cups old fashioned oats
  • ½ cup all-purpose flour
  • ½ cup packed brown sugar light or dark
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup chopped pecans
  • ½ cup unsalted butter melted (1 stick)

Instructions

  • Preheat your oven to 350 degrees F. Spray a 2 quart baking dish with cooking spray. Set aside.
  • Whisk together white granulated sugar, 3 tablespoons flour, ¼ teaspoon cinnamon and ¼ teaspoon nutmeg in a small bowl.
  • Place sliced peaches in a large bowl. Sprinkle with sugar and flour mixture and gently toss to coat as evenly as possible. Transfer to prepared baking dish.
  • Stir together oats, ½ cup flour, brown sugar, ¼ teaspoon cinnamon, ¼ teaspoon nutmeg and pecans in a medium bowl. Add melted butter and stir until incorporated.
  • Evenly sprinkle topping mixture over fruit mixture. Bake for 35 minutes, or until edges are bubbling and fruit is tender.

Notes

  • *FIRM, ripe peaches are easier to peel (I use a potato peeler).
  • Pecans can be omitted from topping, if desired.
  • Feel free to adjust the amounts of cinnamon and nutmeg to suit your personal taste.
