Ingredients

  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • 1 tablespoon olive oil divided (3 teaspoons)
  • 3 cups cubed russet potatoes (1 inch cubes) 2 to 3 potatoes (depending upon size) that have been scrubbed clean, rinsed and patted dry with paper towels.
  • 1 cup chopped yellow onion (¾ to 1 inch pieces) 1 medium onion

Instructions

  • Stir together salt, pepper, garlic powder, and paprika in a small bowl. Set aside.
  • Place potatoes in a medium mixing bowl. Drizzle with 2 teaspoons of the olive oil and toss to coat evenly.
  • Reserve ¼ teaspoon of the seasoning blend for the onions. Sprinkle the potatoes with the remaining seasoning blend and toss to coat evenly.
  • Place potatoes in your air fryer basket in a single layer.
  • Cook the potatoes at 390 degrees F for 7 minutes. While the potatoes are cooking, place the onions in the same mixing bowl and drizzle with the remaining 1 teaspoon of olive oil. Toss to coat evenly. Sprinkle with the remaining ¼ teaspoon of seasoning blend and toss again to coat evenly.
  • After the potatoes have cooked for 7 minutes, add the onions and shake the basket (or use a set of tongs to toss). Cook for an additional 7 to 9 minutes or until potatoes are golden brown and onions are tender.
  • If doubling the recipe and making in batches, when the batches are done, place all the potatoes and onions in the air fryer basket and heat for 1 to 2 minutes.

Notes

  • Once cooled, store leftovers in an airtight container in the fridge for up to 3 to 4 days.
  • Red or gold potatoes can also be used.
  • Potatoes can be cooked peeled or unpeeled.  If peeling, scrub and rinse the potatoes clean and pat dry with paper towels before cutting.
  • This recipe was tested using a 5.8 quart Cosori Air Fryer.
