Bikini season is in full effect here on the coast of NC… therefore I can no longer hide the fact that I’ve put on a few pounds.  Last winter was full of gravy, biscuits, cocktails and cookies. The skinny jeans aren’t so “skinny” anymore. Good thing it’s too hot for jeans right now. Spicy Black Bean Burgers with Pineapple Avocado Salsa Eating like I’ve been recently catches up with you after a while if you don’t watch it. I didn’t watch it.  And that’s what has happened. Spicy Black Bean Burgers with Pineapple Avocado Salsa So I’ve been making several changes in my lifestyle… like getting back to running at least 3 times a week, wake boarding when we go out on the boat (it really kicks my butt!) and eating healthier meals. It’s my goal to run another half marathon this year and I’m doing my best to make it happen. My goal is not for speed, but just to cross the freakin’ finish line. I have recently given up eating meat all together. Morning Star has become a staple in my house. My meat loving fiancé even likes the griller burger. In my opinion, they are better than a ground beef burger. And the chix patties are my latest obsession. And Morning Star could not make cooking any easier. 🙂
