Oysters. Â Most people either love ’em or they hate ’em. Â If you’re a LOVER like me, then you are going to absolutely ADORE this easy and perfectly seasoned Oyster Stew!
I noticed that oysters were on sale at the grocery store the other day and thought to myself, “I haven’t made oyster stew in forever!”. Â It has definitely been before I started the blog since I’ve made it. Â It was a freezing cold day so I was definitely craving soup or stew.
I never wrote down how I made it in the past, but remembered a few ingredients.  So I took my time with this recipe and got everything just right like I like it.  I don’t like the seasonings to overpower the oyster flavor, but I do like to taste something besides oysters and milk!
Not only is this recipe delicious, it comes together in just 15 minutes!
I season with Old Bay Seasoning in pretty much almost every seafood recipe I can think of, I love it!  I also added cayenne pepper, garlic, a little salt, pinch of nutmeg and a bay leaf.  AMAZING.
This stew would also be a perfect starter course if you’re planning on dining at home this Valentines Day… it’s so elegant!

- Total Time: 15 mins
- Yield: 4 (1 cup) servings
Ingredients
- 2 tablespoons butter
- ½ cup minced celery
- 2 green onions, sliced
- 1 tablespoon minced fresh garlic
- 16 ounces raw oysters, undrained
- 1 bay leaf
- â…› teaspoon cayenne pepper
- Pinch of nutmeg
- ½ teaspoon salt
- ½ teaspoon Old Bay Seasoning
- 1 cup milk
- 2 cups half and half
Instructions
- In a dutch oven or soup pot, melt butter over moderately high heat. Add celery, green onions and garlic and saute until celery and onions are tender, stirring constantly (about 2 minutes).
- Reduce heat to medium low. Add remaining ingredients and allow to heat until the edges of oysters start to curl.
- Remove and discard bay leaf before serving. Serve with crackers, if desired.

If you substitute heavy cream for the half and half and water for the milk, the carb count is almost negligible.

Old Bay seasoning make an awesome shrimp boil using a strong flavored beer and water old Bay seasoning and other add ins follow instructions on the seasoning box drain and cool eat until content with cocktail sauce I like the extra hot cocktail sauce
