Mediterranean Salad

This salad is chock full of healthy veggies with a homemade dressing that comes together in just 10 minutes!


For the dressing:

  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon freshly minced garlic
  • 1/2 teaspoon Italian seasoning
  • Pinch of salt
  • Pinch of pepper

For the salad:

  • 21/2 cups tightly packed salad greens (I used spinach)
  • 1/2 cup sliced black olives (about a small can of sliced black olives, drained)
  • 1 cup cherry or grape tomatoes, halved
  • 1 cup thinly sliced cucumbers, cut into half moons (1 small cucumber or about half of an English cucumber)
  • 1/2 cup thinly sliced red onion
  • 1/4 cup crumbled feta cheese


For the dressing:

  1. In a small bowl, whisk together all dressing ingredients. Set aside.

For the salad:

  1. In a large bowl, toss together all of the salad ingredients. Drizzle with the dressing and toss again to evenly coat the vegetables with dressing.
