Guinness Chocolate Cake

For the cake:

  • 1 cup Guinness stout
  • 1 stick of butter, cut into cubes
  • 2 cups granulated sugar
  • 3/4 cup cocoa powder
  • 2 eggs, beaten
  • 2/3 cup sour cream
  • 3 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda

For the frosting:

  • 1 (8 ounce) package softened cream cheese
  • 1 1/2 cups powdered sugar
  • 1/2 cup heavy whipping cream


For the cake:

  1. Preheat your oven to 350 degrees F.
  2. Spray a springform pan with cooking spray and line bottom of pan with parchment paper.
  3. Over medium heat, heat butter and beer in a large saucepan until butter is completely melted; remove from heat.
  4. Using a whisk, stir in butter and sugar. Mix well.
  5. In a small bowl, mix eggs, sour cream and vanilla until blended.
  6. Pour egg mixture into saucepan and mix well; stirring with whisk.
  7. Add flour and baking soda using whisk, stir until smooth.
  8. Bake for 45 minutes, or until toothpick inserted is removed clean.
  9. Place cake on a wire rack and allow to cool.
  10. Remove sides from springform pan and frost cake.

For the frosting:

  1. Using an electric mixer, beat cream cheese until fluffy.
  2. Add powdered sugar and heavy whipping cream.
  3. Beat on medium speed until blended well.
