During my quest for a quick (but delicious) sandwich after a long day at work, I made this embarrassingly simple sandwich:Â a Cheesy Pesto Tomato Baguette.
It was so good and so darn simple and quick (less than 10 minutes), I had to share it. I’ll definitely be making it again.
Honestly, I was really excited that I picked my very first little tomato from the plant my mama gave me recently. These were the items I scrounged up from my kitchen to make a meal with it: a baguette slice, some prepared pesto and Monterey Jack cheese. With a little help from my KitchenAid counter top oven, I whipped this up in a grand total of about 8 minutes flat.
If you’re feeling a little frisky, you can make Simple Homemade Pesto like I do when my basil is abundant.
Oh, and please don’t judge the simplicity of this sandwich in advance… give it an honest chance.
It’s as simple as this:
Slice your desired length of baguette and slather it with some pesto.
Throw some thick slices of cheese up on it. Don’t be shy. I used Monterey Jack but provolone or Swiss would be pretty awesome, too.
Toast it in your counter top oven, add sliced tomatoes and additional pesto, if desired (I love pesto!). Enjoy!

Ingredients
- 1 (6 inch) baguette slice
- 2 tablespoons prepared basil pesto
- 2 slices Monterey Jack, Swiss or provolone cheese
- Tomato slices
Instructions
- Spread pesto over baguette.
- Place cheese slices over pesto. Toast for approximately 5 minutes, or until cheese is melted and baguette is toasted.
- Arrange tomato slices over cheese.
