Blueberry Grilled Cheese Sandwich

I recently was presented with the challenge of coming up with 4 fast breakfast sandwiches for ChefMom.com.  Not that it was a crazy challenge, but I don’t have kids, so I had to think a little differently!  I know kids can be picky and it’s hard to get them to eat their fruits and veggies… that’s why this Blueberry Grilled Cheese Sandwich makes breakfast so easy!

So I came across this idea and just knew I had to make it.  How can you go wrong with hot blueberries surrounded by cream cheese in-between grilled french bread?

Unfortunately, I was so excited about making this sandwich, I forgot to eat breakfast.  This was probably one of the difficult photographs I’ve taken because I was so hungry.

And yes, I did devour it afterwards.  I can vouch for its awesomeness.

    My husband came home one day raving about a blueberry mascarpone grilled sandwich he had. It’s been on my list of recipes to try ever since. Yours looks amazing!
