Happy Tuesday! Today I thought I was going to share this awesome ham casserole with you to use for leftover Easter ham.
Ummmm… epic fail. Not that it wasn’t edible, it was. But it just wasn’t anything that I wanted to share with you that I’d want you to feed your family. Because when I share recipes with you, I want you to say, “DANG… that was freakin’ awesome!” This wasn’t one of those recipes. Sorry.
Instead, there’s been so much happening I thought I’d share with you what’s been going on behind the scenes here at this little house of mine. I’ve been meaning to do this for a while, but it’s been crazy busy around here.
Just because you don’t see recipes every day doesn’t mean that I’m not cranking out something.
For starters, I recently made this awesome Bourbon Lemonade Cocktail for Our State Magazine. It tastes even better than it looks!
I also prepared and photographed the 3 winning strawberry recipes for Our State Magazine sponsored by Lowe’s Foods. I can’t show you a photo of those, yet ’cause you might figure out who the winner is! Between buying the ingredients and photo props, making, photographing and editing all the recipes, it was an entire weekend project.
I bought too many strawberries, so I made this awesome Strawberry Beer Lemonade with the leftovers. It was insane!
I recently had the honor of becoming a contributor to Parade Magazine’s Community Table where I get to share awesome food recipes with you from bloggers across the country. This easy Barbecue Chicken Pizza is in an article giving you 9 Amazingly Fast Dinner Recipes. Check it out!

Now this one is really exciting, and I’ll update with a photo when it’s announced. I recently created and photographed a signature cocktail for “something”. I’m REALLY excited about this and can’t wait to share it with you! That’s all I’m gonna say about that one.
I signed a contract with the North Carolina Pork Council and can’t wait to share awesome pork recipes with you in the upcoming months!
I am blessed to have a pretty awesome day job. I work in Marketing for Bluewater Real Estate and Vacation Rentals. I recently got to go to Clawson’s 1905 Restaurant and Pub and “formally” photograph food at a restaurant for our vacation magazine. This was an awesome mahi dish the chef made for me to photograph (and devour). I was like, “they’re really paying me to do this?” If you’re ever in the Beaufort, NC area, you’ll have to experience the great food and atmosphere at Clawson’s. Tell them I sent you!
I made the first horrific blog blunder of my life recently. There has been so much going on, I had a MAJOR blond moment and incorrectly named a recipe. I was making these awesome Crock Pot Chicken Fajitas and called them chicken enchiladas on the blog. OVER and OVER. Fajita… enchilada… what’s the difference? 🙂 My best friend Melissa sent me this photo the next morning to make me feel better. Thanks, Melissa. Thanks.
Last but not least, I got to participate in my first formal photo shoot. I wanted a profile picture for the blog… Jaredd and his beautiful wife Lizzy of Jaredd Bell Studio came over to my house and this was an experience to say the least. Jaredd had these awesome ideas and we had all kinds of fun making cocktails. I’m going to do a post entirely on this experience, but had to share it with you. Jaredd is just as passionate about his “people” photography as I am about food photography!
Shew! What a crazy (in a good way) few weeks. I hope all the experiences continue, it’s been a great ride so far. Thank you for your continued support and I look forward to sharing lots more foodie stuff with you in the future!
