The Fourth of July is upon us and the last thing I want to do is labor over a hot stove or grill. So I’m going to a cookout where someone else will be doing it :-).  I won’t show up empty-handed, though… I’m bringing this insanely easy and delicious Piña Colada Fruit Salad!
One of my favorite fruit salad recipes is from Taste of Home that I change up a little. I use rum extract instead of almond and coconut extract that the original recipe calls for. Why?  Because it has pina colada mixer in it… you know, the frozen kind that comes in a can? I guess you could add “real” rum to it… hmmm.
I Probably shouldn’t. There’s going to be kiddies at the cookout and I don’t want to be the one to have to explain why they can’t eat their fruit. How confusing would that be?!
You can use just about any fruit that you like. As I was making it, I thought that canned mandarin oranges would be good in it, too.
I’m letting it refrigerate overnight so that all the flavors have time to mingle, although you don’t have to.

PrintPina Colada Fruit Salad
- Total Time: 15 mins
- Yield: 4 servings
Ingredients
- 1 ½ cups green grapes
- 2 cups fresh blueberries
- 1 ½ cups fresh sliced strawberries
- 1 (8 ounce) can pineapple chunks, drained
- 1 cup fresh raspberries
- 1 (10 ounce) can non-alcoholic frozen pina colada mixer, thawed
- ½ cup granulated sugar
- ½ cup pineapple orange juice
- ¼ teaspoon rum extract
Instructions
- Place grapes, strawberry slices, blueberries, raspberries and pineapple chunks in a serving bowl. Gently toss to combine.
- In a separate bowl, whisk thawed pina colada mixer, sugar, juice and extract until sugar is dissolved. Drizzle over fruit mixture and gently stir to coat evenly. Serve immediately or cover and refrigerate.
