Here’s a delicious soup perfect for your New Years Day (or any day!) meal: Â Black Eyed Pea Soup with Sausage and Spinach.
I hope you had an awesome Christmas! Â I’ve gotten all of my decorations down and ready to start the new year fresh. Â Isn’t it crazy how empty your house feels after taking down the decorations? Â I’m enjoying more living room space, though… my tiny house is spaced-challenged already without the decorations!
ABOUT THIS SOUP. Â This soup is amazing! Â It’s chock full of sausage, spinach, black-eyed peas, carrots, onions, tomatoes and is perfectly seasoned.
By using hot pork sausage and RO*TEL (diced tomatoes and green chilies), I didn’t even need to season with salt and pepper (but that’s up to you!).
Serve it with this delicious skillet cornbread for a complete meal!

Description
A hearty and comforting soup perfect for New Years Day!
Ingredients
- 1 pound hot pork sausage
- 1 ½ cups chopped yellow onion
- 2 cups baby carrots (or peeled and sliced carrots)
- 1 tablespoon minced fresh garlic
- 1 teaspoon dried thyme
- 4 cups chicken broth
- 1 (28 ounce) can diced tomatoes (undrained)
- 1 (10 ounce) can diced tomatoes and green chilies (RO*TEL – undrained)
- 2 (15.8 ounce) cans black-eyed peas, drained and rinsed
- 3 cups tightly packed baby spinach
Instructions
- In a large soup pot or dutch oven, brown sausage with onions and carrots over medium high heat until sausage is browned and no longer pink (about 5 to 6 minutes), stirring constantly (crumble sausage while cooking). Drain off any fat from sausage.
- Add garlic, thyme, chicken broth, diced tomatoes and RO*TEL. Stir to combine.
- Bring to a gentle boil and reduce heat to simmer. Cover and simmer for 20 minutes, or until carrots are tender, stirring occasionally.
- Add black-eyed peas and spinach and stir to combine. Cook uncovered for 3 to 4 minutes, or until spinach is wilted.

Best soup ever! Love it! Only next time I’ll chunk the carrots more, I used baby carrots but still thought they were too big. It sort of threw off the texture. So next time smaller chunks of carrots. Taste was wonderful!

I use kale. I put so much in it ends up more like a stew. It looks like it won’t all fit, but then as it softens in the hot liquid I’m able to Shove more in!!! It’s so healthy and oh soooooo good.

Hi Gina, I’ve never used kale in this recipe so I can’t say. It probably would need to cook longer than the spinach since spinach wilts very quickly but again I can’t say because I have not tested the recipe with kale. Hope you enjoy! 🙂

So glad I tried this recipe! I was looking for a different black eyed peas recipe for New Years day. This was so delicious! I am not tolerant of spicy food so I used mild sausage instead of the hot. Otherwise I followed the recipe exactly. It was so flavorful the fist time but even better the next day. Normally I would have frozen half because there are only two people but this was so good that never happened. This is a keeper and will be make again soon! If you don’t want to use spinach can u use cabbage or potatoes?

Hi Linda! I can’t say because I’ve never made it with cabbage or potatoes. If I did I would add the cabbage or potatoes with the tomatoes and broth because they will need to cook much longer than the spinach to be tender. Happy New Year! 🙂
