I’m hoping that you all had an awesome, fun and safe Fourth of July holiday. When I think of an “all American” fruit, a big fat juicy watermelon is the first thing that comes to mind.
Spiked watermelon, that is
. This cocktail is not as sweet as the normal cocktails I post, so be warned. It’s just a tad sweet with a tequila kick.
Yeeeaahhhh.
You could substitute rum and have yourself a nice little mojito, but I wanted tequila. And it was ohhhh so good. Of course I needed a red-inspired cocktail to celebrate the Fourth of July!
And I got it. And it got me.
These are your ingredients: fresh watermelon, fresh mint leaves, tequila, club soda and agave syrup. You’re also gonna need a muddler to muddle up the watermelon and mint. Before I purchased my first muddler, I would “make do” by taking a fork and squishing it all up. So don’t shy away if you don’t have a muddler. And if you don’t have (or don’t want to buy) agave syrup, simple sugar syrup will work.
So there. You don’t have any excuse not to make it. Get to muddlin’!

Ingredients
- 2 cups seedless watermelon chunks
- 1/4 cup fresh packed torn mint leaves
- 1/3 cup agave syrup (or simple syrup)
- 1 cup tequila
- 3 cups club soda
Instructions
- In a pitcher, muddle watermelon and torn mint leaves with agave syrup. Add remaining ingredients and stir well to combine. Serve over ice.
