Every once in awhile, I like to be girly. You know, like drink out of a martini glass instead of a mason jar or a Solo cup.
It doesn’t take much.
Most of the time you’ll see me around town wearing shorts, a t-shirt and flip flops during the summer. Thirsty Thursdays sure have made me feel special. I get to be all girly with my “frou-frou” drinks that everyone looks forward to. You guys rule.
I caught up with some old friends that I haven’t seen in forever last Sunday…I call it my “Sunday Funday”. I met a new friend named Amber who sparked my interest in Pinnacle Cake Vodka. That didn’t take much, either. Amber told me she rims her glass with brown sugar for this “pineapple upside-down cake effect” with pineapple juice and Pinnacle Cake Vodka.
My pineapple upside-down cakes always involve cherries. And you know me…I have to make enough to share…so most of my cocktails are made in a pitcher. So here’s what I did: in a pitcher, I combined a 12 ounce can of pineapple concentrate with club soda, cherry soda, and Pinnacle Cake Vodka. As always, I used the can to measure equal 12 ounce amounts for each ingredient. Stir it all up, and serve over ice in a glass rimmed with brown sugar.
There ya’ go. A little twist to to Pinnacle’s “Pineapple Upside-Down Cake Martini” that they have on their website. Drinks are for sharing. Mix up a pitcher and share the love (responsibly, of course!). Cheers!
A cocktail with the flavor of pineapple cake and a hint of cherry.
Ingredients
- (1) 12 ounce can pineapple juice concentrate, thawed
- 12 ounces Pinnacle Cake Vodka
- 12 ounces club soda
- 12 ounces cherry soda
- Brown sugar for rimming glasses
- Optional: cherries & pineapple for garnish
Instructions
- Rim glasses with brown sugar.
- Pour vodka, club soda, cherry soda & pineapple juice concentrate in a pitcher. Stir well to combine.
- Serve over ice.
