Today I’m sharing one of my new favorite dishes: ragout of beef with cranberries & wild mushrooms. It is from my new cookbook, Falling Off the Bone by Jean Anderson.

In this recipe, the combination of beef, cranberries, red wine & cream offer a sweet, tart robust beef flavor that I’ve never experienced before–but want to revisit
. This dish is inexpensive to prepare & goes a long way. Serve the ragout over rice, noodles or with potatoes. I served this recipe over egg noodles.
Menage a Trois was the red wine I used in the recipe; it is also inexpensive but the taste definitely doesn’t reflect the price, which makes me happy.

Ingredients
- 8 ounces uncooked egg noodles, cooked according to package directions
- 1/4 cup (1/2 stick) unsalted butter
- 3 pounds boneless beef chuck roast (trim excess fat), cut into 1 inch cubes
- 4 large shallots, coarsely chopped
- 1 large yellow onion, coarsely chopped
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 2 cups dry red wine, such as Pinot Noir or Cabernet
- 1 3/4 cups beef broth
- 1 cup whole berry cranberry sauce
- (1) 16 ounce package fresh mushrooms
- 1 cup heavy cream
- Salt & pepper, to taste
Instructions
- Melt butter in dutch oven or stock pot over medium high heat. Add 1/2 of beef cubes in melted butter & cook for 10 minutes, or until browned. Repeat for second half of meat. Transfer to a bowl & set aside.
- Add shallots, onions, mushrooms, thyme & rosemary to pot. Stirring often, saute for 10-12 minutes or until lightly browned.
- Return beef & juices to pot. Add wine, beef broth, cranberry sauce, salt & pepper & bring to a boil. Reduce heat, cover and simmer for 2 hours, or until beef is tender.
- Add cream & simmer uncovered for 30 minutes.
- Serve over egg noodles.

I love beef with mushrooms. Almost any cut of beef is greatly enhanced with mushrooms. Steaks, tips, beef in sauces, even kabobs! I especially like slow cooked beef tips (from a tri-tip cut) in a wine/cream sauce with ‘shrooms over rice. The gravy/sauce is wonderful! This dish sounds incredible especially over noodles!

This looks so yummy, I am going to have to put this in my lists of must try! Thank you for the recipe. I have been trying different recipes with pork lately. With a household of 6 (4 girls) cheap and easy are a must.
I use the inexpensive skin-on bone-in chicken thigh and have created my own version of Chicken cacciatore. My whole family loves it!

I love making pot roast in the crock pot- just pour a can of V-8, a splash of Worcestershire sauce and some chopped onions over the roast and cook on low til it falls apart.
my best creation is the stewed pork chops…..simmered in bell peppers and tomatoes
In the “Falling off the bone” cookbook is a recipe for slow cooker lamb that I made last weekend and it was TO DIE FOR…
