Who would have thought? A pizza crust made with shredded cauliflower, an egg, cheese & seasonings? Shut the front door. It was good. So good that it will probably replace my traditional pizza dough.
While reading one of my favorite food blogs, I came across this recipe that originally came from here. Given my crazy love for pizza and my hubby’s love for eating healthy, this recipe is now golden to me. We have finally met in the middle.
You can put anything in the world you want on it. For this post I made it veggie style with red pizza sauce. I have also made it “chicken pesto style”, using prepared pesto as the sauce, and leftover shredded chicken as the topping.
I was worried about the crust possibly being too soft, so I used a 9 inch cast iron skillet for my pizza pan. It was perfect for the crust, and I didn’t have to worry about “shaping” the crust to a round flat pan.
The crust is super simple ~ shred 2 cups of cauliflower:
Microwave the shredded cauliflower for 8 minutes in a microwave-safe bowl. Then mix the microwaved cauliflower with 1 large egg, 1 cup of shredded cheese (I used mozzarella), garlic powder and Italian seasoning. Press into the bottom of a 9 inch cast iron skillet that has been sprayed with cooking spray. Spray the top of the cauliflower crust with cooking spray.
Bake in a 450 degree F preheated oven until golden brown; it was 9 minutes for me.
Once you remove the cauliflower crust from the oven, change your oven setting to “broil” while you place the toppings on the pizza. I used just plain ole’ jarred pizza sauce, mozzarella cheese, red onions, black olives and mushrooms. The sky is the limit!
Then place the pizza back in the oven and broil until the top is golden brown and the cheese is bubbly, about 3-5 minutes. What an awesome way to have a guilt-free, low carb pizza option! Yay!
Ingredients
- 2 cups shredded fresh cauliflower (about 1/2 large head of cauliflower)
- 1 large egg
- 1/4 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 1/4 cup of your favorite pizza sauce (or more if you like it "saucy")
- 1 cup shredded mozzarella cheese
- 1/2 cup sliced fresh mushrooms (or canned)
- 1/4 cup sliced red onions
- 1 small can (2.25 oz) sliced black olives, drained
- 1 tablespoon grated Parmesan cheese
Instructions
- Preheat oven to 450 degrees F.
- Remove leaves & stems from cauliflower.
- Shred cauliflower using a cheese grater (2 cups).
- Place cauliflower in a microwave safe bowl & microwave for 8 minutes.
- Mix microwaved cauliflower with remaining crust ingredients (egg, cheese, garlic powder, Italian seasoning).
- Press crust mixture into the bottom of a 9 inch cast iron skillet that has been sprayed with cooking spray.
- Spray top of crust with cooking spray.
- Bake for approximately 9 minutes, or until crust is golden brown.
- Remove from oven and change oven setting to "broil" while you prepare the toppings.
- Spread sauce over the crust & sprinkle mozzarella cheese over sauce.
- Spread the vegetables over the pizza.
- Sprinkle with grated Parmesan cheese.
- Place under the broiler for 3-5 minutes, or until golden brown and cheese is bubbly & hot.

I just made this recipe tonight and let me tell you, it was divineee! I made mine in the oven, on a rectangle cookie sheet and put leftover sausage, peppers, onions, and mushrooms on it! It was great! I love the versatility of the recipe, and it’s a great way to use up leftovers. I have more ideas in mind for this recipe…white alfredo pizza with chicken and brocolli…barbeque chicken pizza with pineapple and onions…garlic/olive oil sauce with olives, feta, tomatoes…oh the list goes on!
I see you’re a fellow pizza lover too! LOL! I could eat it every day. The white alfredo with chicken & broccoli sounds divine–I’ve never made that combination but am going to really soon!
