I never like to waste food. Since it’s just my husband & myself, I find that I frequently have left-over ingredients. I try to “recycle” as much as possible, & use the leftover wheat tortillas from my healthy shrimp taco recipe as an easy way to make quick margherita personal pizzas. It is very healthy, yet satisfies my love for pizza.
Ingredients
- 4 whole wheat tortillas
- 4 tbsp olive oil
- 4 tsp chopped garlic
- 4 Roma tomatoes, very thinly sliced
- 1 cup chopped fresh basil (loosely packed)
- 2 cups shredded mozzarella cheese
- Pepper, to taste
- 1/2 cup Parmesan cheese
- 4 tsp oregano
Instructions
- Preheat oven to 350
- Place tortillas on large baking sheet
- Brush each tortilla with 1/2 tbsp olive oil & 1/2 tsp chopped garlic
- Bake tortillas for approximately 3-4 minutes
- Remove tortillas from oven
- Layer tomatoes over tortilla; Sprinkle with pepper
- Sprinkle 1/2 cup mozzarella cheese, 1/4 cup basil, 1/8 cup Parmesan cheese & 1 tsp oregano over each tortilla
- Drizzle approximately 1/2 tbsp olive oil over each personal pizza
- Return to oven; Bake an additional 5 minutes, or until cheese is melted and tortilla is crispy
